A jewel among the Sabatini Mountains, Lake Martignano rests in the countryside north of Rome, nestled within an extinct volcanic crater, at 207 meters above sea level. These lands, inhabited sinceEtruscan age, tell a story thousands of years old: the Etruscans, master builders, carved a "tagliata" (a path cut into the tuff rock) to easily access the lake’s volcanic crater. Today, walking through that same path, you are met with a view that takes your breath away—a corner of beauty that feels suspended in time. Over the centuries, the Romans were also captivated by this land, naming the lake Alseatinus. They used its waters to build an aqueduct that reached the naval battles recreated in the vast depressions of the ground Trastevere,in Rome.

In the 14th century, the Popes not only preserved but adapted the ancient aqueduct to continue bringing the lake’s fresh waters to Rome, where they still flow today from the Fontanone del Gianicolo,offering a spectacular view over the capital. Isolated from major traffic flows and urban presence, Lake Martignano is today a true miracle of ecological integrity, ranked among the cleanest lakes in Italy. Its forested slopes, lush riparian vegetation, and abundant fish life make it a natural oasis to be protected with care and sustainability.

TEAMlands surrounding Casale di Martignano have always beenfertile, ideal for crops and livestock. Today, the farmhouse continues this tradition with a large organic garden, managed by Cooperativa Barikamà,and sheep farming, recently joined by free-range pig farming. From these animals, we produce cheeses and cured meats in our own dairy and deli, used directly in our restaurant to offer genuine and authentic dishes.
